Bitter Apple works!

"My cats hate the taste of this stuff. It worked to keep them from chewing cords, and when one of my cats kept aggravating a hot spot after it healed, I put Bitter Apple on it--she stopped chewing at it, and it soon healed.
Some cats actually get used to the flavor of this stuff (I knew a cat who persistently chewed even though she didn't like the taste), but if you get them started before they get into the chewing habit, it can work.
As a bonus, a lot of cats also hate the smell, especially if they associate the smell with that awful taste, so it can act as an indoor repellent too. For my cats the level of effectiveness in this respect depends on how much they really want the item in question."
